Fanouropita (Traditional Greek cake)

Servings: 25 -30


1 cup ACAIA or Aeolian Olive extra virgin olive oil
1 cup white sugar
1 tsp cinnamon
1 tsp baking powder
¼ tsp baking soda
½ cup walnuts, coarsely chopped
½ cup raisins
½ cup water
¾ cup fresh orange juice
4 cups self-rising flour
powdered sugar, approximately 2 tbs


1. In a large bowl, mix the ACAIA or Aeolian Olive extra virgin olive oil, sugar, cinnamon, baking powder, baking soda, walnuts, raisins, water, orange juice, and flour.

2. Knead gently with hands, until the mixture is not sticky.

3. Grease a cake pan (12 in or 30 cm diameter) and pour in the mixture.

4. Bake in oven for 45 minutes at 356°F (180°C ).

5. When ready, remove from oven and let it cool. Sprinkle with powdered sugar.
